Oh, short ribs. They are so delicious. When I slaughtered my first steer, I had never had short ribs. I cooked them for the first time in the crock pot with red wine and rosemary and was literally in awe of how delicious they are. Figuring no one really ate short ribs because I never had, I proceeded to eat ALL OF THEM over the next few weeks. When people began to ask if I had short ribs I told them they had sold out. I now control the urge to eat them all.
